THE SAMPLES OF PASTEURIZED MILK ARE PRE-INCUBATED FOR 25 HOURS AT DIFFERENT TEMPERATURES: 285, 288, 291 AND 294 K (12, 15, 18 AND 21 DEG C) ON DIFFERENT MEDIA, BEFORE COUNTING OF PSYCHROTROPHS. CORRELATIONS BETWEEN THE CONDITIONS OF PREINCUBATION AND COUNTING RESULTS ARE STUDIED. THE MILK SHELF-LIFE AT 275, 279, 283 AND 287 K (2, 6, 10 AND 14 DEG C) CAN BE PREDICTED BY PRE-INCUBATION OF THE SAMPLES AT 288 K BEFORE CULTURING ON GELOSE.
