Summary

This article gives an overview of the metabolic characteristics of grapes post harvest (perspiration, respiration, ripening). Parasitic infestation is covered. Desirable rapid chilling conditions and how SO2 should be used to protect against Botrytis are discussed, as are transport, packaging and distribution conditions.
