THE GROWTH OF PSYCHROTROPHIC BACTERIA IN RAW MILK, COOLED AND STORED FOR TOO LONG, PRODUCING PROTEASES AND LIPASES, SHOULD BE PARTICULARLY MENTIONED. ATTENTION IS DRAWN TO THE CONTAMINATION OF CHILLED MEAT BY PSEUDOMONAS, PSYCHROTROPHIC LACTOBACILLI, THE FACULTATIVE ANAEROBIC BACTERIA (BRONCHOTHRIX THERMOSPHACTA =MICROBACTERIUM THERMOSPHACTUM), ESPECIALLY IN VACUUM-PACKED MEAT OR MEAT PACKED IN CO2. SEVERAL AEROTYPES OF YERSINIA ENTEROCOLITICA WERE OBSERVED IN SLICES OF VACUUM-COOLED BACON (EXPORTED FROM DENMARK).AMONGST THE MICROORGANISMS PATHOGENOUS FOR MAN, THE A. QUOTES SALMONELLA STRAINS THAT ER ENTEROBACTERIACEAE, AND SOME CLOSTRIDIUM BOTULINUM STRAINS, MAINLY OF FISH ORIGIN.G. G.ROORGANISMS PATHOGENOUS FOR MAN, THE A. QUOTE.
