Summary
This paper presents an overview concerning all aspects of the cold chain for refrigerated products (above 0 °C). The new European rules are based on the notion of hazards and methodologies enabling estimation of the risks. The present paper highlights the methods allowing the prediction of hazards, especially in France, and the measures required to ensure good control of conditions all along the cold chain.
