THE AUTHOR NOTES THE PREDOMINANCY OF CEREALS. ONLY ABOUT 7.5% OF THE FOOD ENERGY CONSUMED RELATE TO PERISHABLES. IN DEVELOPING COUNTRIES THIS PERCENTAGE DECREASES TO 4.1%. IN ORDER TO COMPARE DIFFERENT FOODSTUFFS FOR NUTRITIONAL VALUE, A REQUIREMENT OF 2,400 KCAL/DAY IS CONSIDERED AND THE COST OF STORAGE INCLUDES DEPRECIATION AND POWER REQUIREMENTS. THE AUTHOR GIVES THE RESULTS FOR THE COOLING OF MILK AND MEAT AND THE FREEZING OF MEAT AND FISH. CAPITAL COSTS ARE HIGHER THAN POWER COSTS. DISTRIBUTION COSTS ARE MARKEDLY HIGHER THAN STORAGE COSTS. THE AUTHOR BRIEFLY SURVEYS THE ADVANTAGES OF OTHER STORAGE METHODS SUCH AS THE LIVE STORAGE OF ANIMALS OR FISH.
