Summary

Italian law relative to fresh cut products is rather fragmented and incomplete. The processing concerns, especially the small/ medium sized ones, do not often have a clear account of the food industry regulations, even though the current regulations exist in a generic form regarding all foodstuffs such as fishing, meat and dairy, products. The aim of this article is to give a practical guide to the requirements and regulations to be complied with.
