THE AUTHORS STUDIED QUICK FREEZING AND CLEAR-JUICE EXTRACTION. THE RESEARCH ON QUICK FREEZING CONCERNED THE SUITABILITY OF SEVERAL VARIETIES TO THE PROCESS AND WAS PERFORMED BY MEANS OF PHYSICAL-CHEMICAL ANALYSES AND ORGANOLEPTIC TESTS. AS REGARDS CLEAR JUICE, THE STABILITY OF THE COLOUR AND OF THE MAIN COMPONENTS DURING STORAGE WAS EXAMINED. BERRY CLEAR JUICE WAS MIXED WITH APPLE CLEAR JUICE WITH THE AIM OF PRODUCING AN < ALL FRUIT > BEVERAGE.
