In a series of short overviews the main projects included in the scientific and technical State Program of Russia are presented: scientific support related to food processing industries; development of refrigerated transport; development of the theoretical basis for meat quality management during its cooling process and storage; preliminary cooling and transport of vegetables; new processes of meat processing; the new technology of manufacturing freeze-dried products; preservation of vegetables, legumes and potatoes.
