This book comprises the Proceedings of the CFE Conference held in Agen, France, on June 4, 1998. Extract of the summary of the plenary assemblies and workshops: new stakes in the cold chain; stakes in energy efficiency in refrigeration and Ademe's efforts; fruit and vegetables (innovative solutions from harvesting to the consumer; product quality enhancement in refrigerated plant: strawberries); milk and dairy products (control of the hygiene aspects of refrigerated air cooling); meat and fish (refrigeration and dehydration of Bayonne ham; quick-freezing tunnel); refrigeration control during transport: evolution in equipment; new plant (refrigerated storage; fast cooling and wet air cooling room; refrigeration for heating applications); refrigerated storage, analysis and recommendations: thermodynamic and thermographic infra-red diagnosis.
