THE AUTHORS GIVE RELATIONSHIPS BETWEEN ALCOHOL INSOLUBLE SOLIDS, THE READINGS ON THE MARTIN TENDEROMETER, THE READINGS ON THE INSTRON/OTTAWA CELL AND THE RESULTS OF A SENSORY ANALYSIS OF FROZEN PEA TEXTURE. ALTHOUGH THE CORRELATIONS ARE SIGNIFICANT, THE EXTENT OF SEASONAL EFFECT AND OF VARIETIES AND CONFIDENCE LIMITS SHOULD BE NOTED. COLOUR, FLAVOUR AND TEXTURE APPEAR AS SPECIFIC STANDARDS.
