Summary

THE EFFICACY OF THE TREATMENT BY SOLID CO2 ON THE POULTRY IS EXAMINED, WITH THE AIM TO INCREASE THE SHELF LIFE. POULTRY AS SOON AS SLAUGHTERED IS TREATED STREWING THEM ON THE SURFACE, AT THE EXIT OF THE SLAUGHTERING-CHAIN, WITH DIFFERENT LEVELS OF SOLID CO2, CONTROLLING THE SUPERFICIAL MICROBIAL FLORA. THE RESULTS SHOWED A GOOD SUCCESS OF TREATMENT AT THE HIGHEST LEVELS.
