CONTENTS OF TARTARIC, MALIC, CITRIC, SUCCINIC, QUINIC, SHIKIMIC, ACETIC, AND AMINO ACIDS OF SEVERAL TABLE GRAPE CULTIVARS AFTER HARVEST AND IN COLD STORAGE HAS BEEN INVESTIGATED. DIFFERENCES CONCERNING COMPONENTS OF ACIDITY SYSTEM ARE FUNCTION OF THE VOLUME AND INTENSITY OF DISSIMILATION OF SUGARS, BIOSYNTHESIS, TRANSFORMATION. THE DEPENDENCE AMONG METABOLISM OF ORGANIC ACIDS ACIDITY STATES, CULTIVARS, CONSERVATION, DURATION AND QUALITY OF PRODUCTS HAS BEEN DETERMINED.
