THE PAPER PRESENTS INVESTIGATIONS OF THE INFLUENCE OF TEMPERATURE ON THE STORAGE LIFE OF CAMEMBERT CHEESE AS WELL AS CHEESE MANUFACTURED BY A MODIFIED PRODUCTION PROCESS. THE SHELF LIFE OF MODIFIED CAMEMBERT CHEESE STORED AT A TEMPERATURE OF 277 K (4 DEG C) WAS FOUND EQUAL TO 28 DAYS WHILE STORED AT TEMPERATURE OF 291 K (18 DEG C) WAS FOUND EQUAL TO 6 DAYS. COMPARED TO THE STANDARD CAMEMBERT CHEESE THIS WAS LONGER BY 7 DAYS AND BY 3 DAYS, RESPECTIVELY.
