STUDY OF CHANGES IN THE BIOCHEMICAL, BACTERIOLOGICAL AND ORGANOLEPTIC PROPERTIES OF THIS FISH STORED IN ICE DURING 1 TO 20 DAYS. THE NON PROTEINIC NITROGEN CONTENT DECREASES WHEREAS THE HYDRO-SOLUBLE NITROGEN REMAINS STABLE. THE BACTERIA COUNT INCREASES AFTER 11 DAYS STORAGE.
