Summary

RESULTS OF A BELGIAN SURVEY (70 SAMPLES) FOLLOWING SERIOUS FOOD POISONING WHICH OCCURRED IN THE NETHERLANDS AND ATTRIBUTED TO PEELED SHRIMP FROM SOUTH-EAST ASIA. THE AUTHORS SHOW THAT A SIGNIFICANT PERCENTAGE OF CHILLED PEELED SHRIMP DOES NOT MEET THE STANDARDS FOR TOTAL GERM COUNTS AND THAT FROZEN SHRIMP GENERALLY HAVE A BETTER BACTERIOLOGICAL QUALITY THAN CHILLED SHRIMP. CONTAMINATION PRIOR TO AND AFTER PEELING IN THE LABORATORY WAS ALSO COMPARED. J.R.
