Detailed description of the organization of meat production and notably freezing. Study of this system can result in large savings. The system is divided into 3 sub-systems whose stability and reliability are analyzed. The results of tests on sub-systems, under different conditions, are presented, and it is considered that future studies have to focus on the improvement of the refrigeration sub-system. C.C.
