THE NUMBER OF PSEUDOMONAS PSYCHROTROPHS, ISOLATED FROM HOMOGENIZED MILK WHICH HAS BEEN PASTEURIZED AFTER A GIVEN STORAGE TIME, IS COMPARED WITH THE NUMBER OBTAINED AFTER AN EQUIVALENT STORAGE TIME AT 277 K (4 DEG C), USING A TIME/TEMPERATURE INTEGRATOR (TTI). A SIMPLE TEST IS PROPOSED TO MEASURE THE SHELF LIFE, BASED ON THE TTI AND ON STORAGE AT 285 K (12 DEG C). PRACTICAL APPLICATIONS OF THE TTI TO PROCESS CONTROL AND TO PREDICTION OF SHELF LIFE.
