Summary

THREE FISH SPECIES WERE ANALYSED: -DISSOSTICHUS ELEGINOIDES, STILL KNOWN AS . -NOTOTHENIA SQUAMIFRONS OR . -CHAMPSOCEPHALUS GUNNARII OR . BASED ON CHEMICAL AND ORGANOLEPTIC CRITERIA THESE THREE SPECIES CAN BE STORED, ACCORDING TO EXPERIMENTAL CONDITIONS AND THE BIOLOGICAL STAGE, FOR MORE THAN ONE YEAR AT 243 K (-30 DEG C) WITHOUT THE ALTERING DEFECTS OBSERVED DURING ACCELERATED AGING AT 263 K (-10 DEG C). IN ALL THREE CASES FISH TEXTURE IS UNAFFECTED BY FROZEN STORAGE. THE TWO SPECIES CHAMPSOCEPHALUS GUNNARII AND NOTOTHENIA SQUAMIFRONS ARE WELL SUITED TO THE PREPARATION OF FROZEN PRODUCTS (CRUMBED FISHSTICKS). THE DISSOSTICHUS ELEGINOIDES SPECIES, HOWEVER, LOSES FLAVOUR DUE TO THE PRESENCE OF FATS.
