Summary

Asparagus spears were cooled 4, 8, 12, 16 or 20 hours after harvest, followed by a 24-day storage. Shear tests were carried out. The longer the delay before cooling and the longer the storage time, the more the texture was fibrous. Various tests are described in detail.
