Summary
The thawing conditions of wrapped thick meat blocks in circulating air were investigated. In order to prevent odour problems, it is necessary to act quite rapidly but without using air temperatures above 5 deg C. To reduce weight loss, air velocities above 1 meter/second are recommended.
