THE COLD CHAIN IN THE UNITED KINGDOM. RETAIL CABINETS: THE WEAKEST LINK.

Author(s) : WOOLFE M. L.

Summary

A THOROUGH INVESTIGATION CARRIED OUT IN THE UK TO MEASURE TEMPERATURES IN 3 TYPES OF FROZEN FOODSTUFFS, REVEALED THAT THE PRIMARY AND SECONDARY COLD STORES CONFORMED WITH THE DIRECTIVE ON FROZEN FOODSTUFFS. IN DISPLAY CABINETS, APPROXIMATELY 15% OF FOODSTUFFS ARE AT A TEMPERATURE OF 261 K (-12 DEG C) OR MORE, WHICH IS GREATER THAN THE MAXIMUM ALLOWABL OEAC. FACTORS WHICH AFFECT THE TEMPERATURE OF FROZEN FOODS IN RETAIL DISPLAY CABINETS ARE NUMEROUS AND DEPEND ON THE MODEL AND OPERATING CONDITIONS. TO COMPLY WITH THIS LEGISLATION, IT WILL BE NECESSARY TO REPLACE OR IMPROVE MANY DISPLAY CABINETS.
