Summary

VERY LARGE QUANTITIES OF BEEF ARE FROZEN, STORED AND SOLD THROUGHOUT THE WORLD AS HIND AND FORE QUARTERS. HOWEVER, THERE ARE FEW DATA UPON THE RELATIONSHIP BETWEEN FREEZING CONDITIONS AND THE TIME OF FREEZING PROCESSES FOR THE RANGE OF WEIGHTS COMMON IN TRADE. THE AUTHORS PRESENT A STUDY AIMED AT OBTAINING THESE DATA FOR WEIGHTS OF QUARTERS RANGING BETWEEN 40 AND150 KG, FROZEN IN AIR AT 241 K (-32 DEG C) AND 1.5 M/S (AVERAGE CONDITIONS IN THE UNITED KINGDOM) AND THEY DEFINE THE OPERATING RESTRICTIONS OF 24 AND 48 HR CYCLES REQUIRED BY INDUSTRY. THEY ALSO MADE MEASUREMENTS FOR CONTROLLING WEIGHTLOSS AND BACTERIAL CONTAMINATION DURING FREEZING.
