Summary

A survey was made in Beijing of the bacteriological quality of retail meat and meat products. Of 105 samples of meat (30 pork, 28 lamb, 31 beef and 16 chicken), 66% had an aerobic plate count higher than 6.0 log CFU/g. Of 52 meat products, 20 samples had an aerobic plate count lower than or equal to 4.7 log CFU/g, this being the limit for meat products as laid down by the Chinese Department of Hygiene. Only 5 meat products met the hygiene standards of this Department.
