Summary

A CONSIDERABLE PORTION OF PRODUCE IS BEING LOST DUE TO THE LA CK OF A WELL ESTABLISHED COLD CHAIN SYSTEM. A RAPID DEVELOPMENT HAS BEEN OBSERVED DURING THE LAST 20YEARS IN THE USE OF REFRIGERATION. TODAY, TURKEY HAS 686,504 TONS OF CHILLED AND 78,767 TONS OF FROZEN STORAGE CAPACITY. APPLES ARE THE MAIN STORED FRUITS AND COMPRISE APPROXIMATELY 40% OF THE TOTAL STORED FOODS. CHEESE TAKES THE SECONDIMPORTANT PLACE AMONGST AGRICULTURAL PRODUCTS. AN INTERESTING APPLICATION IN TURKEY IS THE STORAGE OF CITRUS FRUITS, APPLES AND POTATOES IN NATURALLY COOL UNDERGROUND CAVES OF THE URGUP REGION WITH A STORAGE CAPACITY OF APPROXIMATELY 474,150 TONS.
