Summary

THE ROOTS OF TUBEROUS CHERVIL ACCUMULATE CARBOHYDRATES SUCH AS SACCHAROSE AND STARCH. THE POST-HARVEST STORAGE OF THE ROOTS MODIFIES THE CARBOHYDRATE CONTENT AND THERE IS LOSS OF STARCH, AN INCREASE IN SACCHAROSE AND REDUCING SUGAR CONTENT. THE EFFECT OF LOW TEMPERATURES DURING STORAGE IS ALSO MENTIONE THE BEST EATING QUALITY PROBABLY DEPENDS ON THE PROPORTIONS OF STARCH, SACCHAROSE AND REDUCING SUGARS.
