Summary

WEEPING IN APRICOTS, PLUMS, SOUR-CHERRIES, AND CHERRIES WAS STUDIED. THE EFFECT OF VARIETY, DEGREE OF MATURITY, PITTING AND FREEZING WERE INVESTIGATED. CHANGES WERE FOLLOWED UP BY MEASURING THE AMOUNT OF EXUDATE, THE REFRACTIVE INDEX, ACID AND SUGAR CONTENT AND THE CONSISTENCY OF THE FRUIT. SENSORY TESTS WERE CARRIED OUT. THE BEST RESULTS WERE FOUND WHEN THE FRUIT WAS USED IN THE FROZEN STATE FOR THE TART.
