Summary

THE JUICE HAS BEEN OBTAINED FROM STRAWBERRIES TREATED BY PEKTOPOL PT (PECTOLITICAL SUBSTANCE) FOR 2 HOURS AT 293 K (20 DEG C), CONDENSED BY CRYOCONCENTRATION UP TO 20, 30 AND 40% OF DRY SUBSTANCE. BASING ON TEST RESULTS THE CONCLUSION IS THAT THE APPLYING OF SEVERAL STAGES OF JUICE CONDENSING IS PREFERABLE BECAUSE OF BETTER RETENTION OF DRY SUBSTANCE BY APPROXIMATELY 14% AND LOWER LOSS IN ICE BY APPROXIMATELY 5%.
