Thermal mapping of a refrigerated container with temperature indicators and electronic recorders.

Summary

Product temperature variation was determined by placing disposable temperature indicators on the exterior of 99 cases of frozen food and placing small electronic temperature recorders in the centre of 9 of these 99 cases. The instrumented cases were evenly distributed throughout the load. Frozen products located along the floor of the trailer showed the greatest temperature increase. The triggering of a thermomarker on the outside of a case of frozen foods indicated that the temperature in the centre of the case had come with more or less 2 deg C of the triggering temperature of the device. The thermomarker can be used as a less expensive tool in a quality control program for the transport step of the food distribution system. It could also be used more generally during every step of the cold chain.
