Carbohydrates and chilling injury in carambola (Averrhoa carambola L.) and mamey (Pouteria sapota) fruit stored under refrigeration.

Summary

Chilling injury and carbohydrate content in the tropical fruit carambola cv. Yau and mamey were studied by maintaining the fruits at 10 and 2 °C (85-90% RH). Chilling injury index (CII) and sucrose, fructose and glucose content were measured over a thirty-day period. CII was studied, according to sucrose or fructose content, for different storage temperature conditions.
