Summary

Frozen storage of bullfrog leg muscles, for a period of 182 days showed that the total lipid content remained constant. The phospholipid fraction decreased after two months of frozen storage. Free fatty acid content increased from 6.5 to 47.8%; this change was correlated to a decrease in myofibrillar proteins solubility.
