Summary

The sauce-coating process used for IQF (CRYOMIX) products has been developed by Armor Inox and Air Liquide; it makes it possible to achieve accurate, total and homogeneous sauce coating. The products obtained can be divided into portions thanks to the coating technique; portions are easily and quickly (6-7 min.) heated in a pan or in a microwave oven without the addition of other ingredients.
