Summary
Mould strains (including Penicillium roqueforti and P. camemberti) and yeasts are cultivated on agar-agar-malt extract, suspended in skimmed milk and frozen in liquid nitrogen. Study of the number of live cells immediately and 24 hours after freezing and after 1.5 to 10 years of storage. Results are discussed for each type of yeast.
