Summary
The author discusses differences between regulations in Australia, New Zealand and the US on one hand, and in Europe on the other hand. The former are very much guidelines, while the latter are far more prescriptive, and include definitions and legally enforceable rules. The author highlights that some requirements inherent in European regulations remain vague. In terms of quality and safety, the author underlines that Mr Sørensen describes a survey carried out on quick-frozen food exposed to temperature abuse and for which no decrease in quality or no microbial growth had been identified. The author welcomes the less-prescriptive New Zealand and Australian approach, which relies more on the responsibility of operators.
