THE AUTHORS EXAMINED 425 SAMPLES OF ICE CREAM PRODUCED BY SMALL FIRMS OF VENICE'S DISTRICT. THE ICE CREAM HYGIENIC EVALUATION IS GIVEN USING THE MICROBIOLOGIC LIMITS OF THE O.M. 11.10.78, WITH RESULTS OF TOTAL VIABLE COUNT, TOTAL COLIFORMS, FECAL COLIFORMS, SALMONELLA AND STAPHYLOCOCCUS AUREUS. A CORRELATION BETWEEN TOTAL VIABLE COUNT AND TOTAL COLIFORM HAS BEEN SHOWN WITH LINEAR RELATION.
