Summary
Models to describe spoilage are discussed, together with examples. The possible uses of models in support systems for decision making are given, with an example of a procedure to couple heat transfer models to microbial growth models. A procedure to optimise a cold chain is shown. Models, kinetics data, expertise, logistics, simulation and optimization routines can be combined in support of decisions in production and distribution and also influence product development.
