Summary

In terms of food safety, regulation No. 2073/2005 opens up the era of modernized microbiological criteria by contributing to a "high level of human health protection", as specified by regulation No. 178/2002. However, several years after this regulation was implemented, these criteria still raise many questions. The book is in three parts. First, regulations concerning microbiological criteria within the regulatory framework aiming at foodstuffs are analysed. Then the microbial agents involved (L. monocytogenes, E. coli, Salmonella, staphylococcus) are described in detail, along with their pathogenic effects and the health hazards they can cause. Finally, implementing microbiological criteria is discussed through the study of the obligations and responsibilities of food-sector companies, of sampling methods (how they are selected and interpreted), and their efficiency and limits.
