Summary

In the introduction, a definition of perishable foodstuffs is given. The risk to chilled and frozen products should the cold chain be broken, are analyzed. An update is given of recent logistic developments. Different cold chain links (production, long-distance transport, storage, distribution storage, distribution transport and retail sale and their most sensible points) are examined. New tools are presented which make possible better management, including: quality-assurance systems, certification of products, vehicles, retail cabinets and refrigerators (taking into account standards) and the temperature-time register.
