Obtaining homogeneously dispersed ice crystals by high-pressure-shift-freezing.

Summary

The different potentialities for the modification of the freezing behaviour of water systems are described, with a special focus on the use of high-pressure shift freezing. The high-pressure methodologies have a growing industrial implantation and constitute alternative approaches to the battery of pre-existing processes. Massive, uniform and instantaneous ice nucleation is induced, in this methodology, after a high-pressure release under low-temperature conditions. The percentage of water that is frozen in this instantaneous process can be calculated after application of theoretical models.
