Organic, natural ice cream: technological challenges and market opportunities.

Author(s) : BRAY F.

Summary

The natural organic dairy ice cream composition provides a frozen product which possess organoleptic characteristics of premium product, complies with organic labelling requirements and sports all-natural ingredient composition free of added stabilizing gums and surfactants which are traditionally used in frozen desserts. The cost of its composition is about 20% higher than the reference, due to the price of organic raw materials. The market for costly organic foods is growing beyond most expectation and ice cream will follow the international trend. The superpremium ice cream market exceeds USD 400 million, almost 10% of the total ice cream category in the US and 8% in EU.
