PHYSIOLOGICAL DISORDERS CAUSED BY REFRIGERATION BEGIN TO OCCUR AT 288 TO 273 K (15 TO 0 DEG C) ACCORDING TO SPECIES AND THE VARIETY. PITTING AFFECTS FLAVEDO AND EVEN ALBEDO ; IT IS DUE TO THE NECROSIS OF CELLS CAUSED BY THE TERPENES FREED BY OIL-PRODUCING POCKETS. PETECA IS A SPECIFIC FORM OF PITTING. WHEN THE DETERIORATION OF ESSENTIAL OIL POCKETS IS SMALL, ONLY SLIGHT BROWNING OCCURS, THE DISORDER BEING OLEOCELLOSIS. ADUSTIOSIS AND MEMBRANOSIS AFFECT ONLY LEMONS. SUCH DETERIORATIONS CAN BE REDUCED OR PREVENTED BY ADJUSTED COOLING CONDITIONS, CONTROLLED ATMOSPHERE, FRUIT WAXING AND INDIVIDUAL PACKAGING IN PLASTIC FILMS. NEW PROCESSES APPEARED: BATCH HEATING AND COOLING. THESE TREATMENTS RESTORE THE NORMAL METABOLISM OF SOME TOXIC COMPONENTS RESPONSIBLE FOR COLD STORAGE DISORDERS.
