THE RESULTS OF A STUDY OF THE BIOCHEMICAL, STRUCTURAL, MECHANICAL AND MICROBIOLOGICAL CHANGES IN COTTAGE CHEESE WITH HIGH (18%) AND MEDIUM (9%) FAT CONTENT ARE SHOWN, AFTER VARIOUS FREEZING PROCESSES AND DURING STORAGE AT 261 TO 255 K (-12 TO -18 DEG C). IT WAS ESTABLISHED THAT COTTAGE CHEESE QUICK-FROZEN AT A RATE HIGHER THAN 0.014 M/H CAN BE STORED AT 261 K FOR 2 MONTHS MAXIMUM.
