Summary

It was studied the shelf life of air packed and vacuum packed sliced pork meat on the basis of microbial data (mesophilic aerobic microbes, pseudomonads, lactobacilli) as the function of radiation dose (1 and 2 kilograys) and the storage time. The colony count and the time detection was determined experimentally. Fitted curves (characterised by growth rates, initial- and maximum cell counts) and shelf life was calculated.
