HAKE WAS STORED IN ICE WITHOUT TREATMENT AND COMPARED WITH SIMILAR FISH DIPPED FOR 5 MINUTES IN VARIOUS SOLUTIONS OF POTASSIUM SORBATE AND SODIUM ACID PYROPHOSPHATE WITH A PH OF 5 + OR -0.5. FISH WERE INITIALLY EXAMINED FOR TOTAL FLESH COUNT AT 20 DEG C ON A SEAWATER BASED MEDIUM, THEN AT INTERVALS UP TO 17 DAYS. NONE OF THE TREATMENTS CAUSED A PERMANENT REDUCTION IN ORGANISMS. THERE WAS A VERY SIGNIFICANT NEGATIVE CORRELATION BETWEEN CONCENTRATION OF SOLUTION AND THE LOG TOTAL COUNT. CONCENTRATION OF THE SOLUTION ALSO HAD AN EFFECT ON ODOUR RATING FOR A GIVEN STORAGE TIME, AND IN GENERAL THE STORAGE LIFE WAS EXTENDED BY 60%. TREATMENT IMMEDIATELY AFTER CATCHING WAS PROPOSED TO FURTHER EXTEND THE STORAGE LIFE. G.R.S.
