DIVIDED ALMOST EQUALLY BETWEEN CO2 AND N2, THE CONSUMPTIONOF CRYOGENS FOR FOOD FREEZING IN THE USA IS ESTIMATED AT APPROXIMATELY 10,000 T PER WORKING DAY. THE EXPANSION OF FAST-FOOD RESTAURANT CHAINS IS THE PRINCIPAL REASON. RAPID FREEZING RATES AND HIGH THROUGHPUTS ARE REQUIRED IN ORDER TO ATTAIN THE FIGURES FOR THE MECHANIZED TREATMENT PRODUCTION LINES, THE BUYING SYSTEMS AND CENTRALIZED DISTRIBUTION. AS THE FAST-FOOD CHAINS HAVE DIVERSIFIED THEIR MENUS, A VARIETY OF FOODS HAVE TO BE FROZEN. A WIDE VARIETY OF CRYOGENIC FREEZERS HAVE BEEN DEVELOPED. NEW ANALYTICAL TECHNIQUES PROVIDING THE PRECISE APPLICATION OF THESE UNITS HAVE BEEN DEVELOPED.
