COMPARISON OF FREEZING SYSTEMS (CONTINUOUS, DISCONTINUOUS). REFRIGERATION WAS GOT BY MECHANICAL MACHINES OR CRYOGENIC FLUIDS (N2, CO2). THE MACHINES COULD FREEZE 500 KG OF PRODUCTS PER HOUR, THEY WORKED DURING 1,600, 2,000, OR 3,000 HOURS PER YEAR. THE AUTHOR CONSIDERED TWO PRODUCTS HACKED SPINACH AND MINCED BEEF MEAT. FREEZING COSTS ARE LOWER FOR MECHANICAL SYSTEMS THAN FOR CRYOGENIC SYSTEM. THE LOWEST COSTS ARE GOT BY USING IMMERSION IN A BRINE OF CALCIUM CHLORIDE.
