Rheological behaviour of gelatinized starch pastes stored at low temperatures.

Summary

The objectives of the work were to analyze the rheological behaviour of starch and fat-based pastes, as a function of: 1) composition using different thickening agents and a stabilizer; 2) refrigerated storage; 3) freezing rate, in order to identify optimum processing conditions which would minimize structural changes.
