Summary

The aim of this work was to determine the impact of two stresses, water deficit/stress (WS) and low temperature (LT), as well as of their interaction, on the rheological properties and the firmness of Lettuce var. Maravilla de Verano, establishing relationships with other quality and protective parameters. Three different WS conditions were imposed: well-watered (WW), moderate water stress (MWS) and severe water stress (SWS), without and with additional LT stress. An increase of the viscosity with WS severity was observed, which could in part reflect the higher TSS content of these plants. LT decreased viscosity, with the lowest viscosity values corresponding to plants subjected to MWS + LT. However, additional LT exposure did not increase the softening of the leaf, achieving even greater firmness after exposure to BT in lettuce also subjected to MWS during growth. MWS maintained the quality of the lettuce and induced protective mechanisms against LT stress.
