Summary

It was the perfecting of the cold chain that made possible better food distribution without risk to the consumer. Sanitary regulations that set the optimal temperatures for food preservation are based on traditional scientific principles, but should take into account changes in consumer habits, technical progress in the food sector and the inherent risks of this progress, since the objective of regulations is to guarantee the safety of the consumer.
