Summary

A TOTAL OF 50 SAMPLES OF RETAIL PACKS OF FROZEN, GROUND BEEF, PURCHASED FROM SUPERMARKETS IN EGYPT, WERE EXAMINED AND SPOILAGE AND FOOD POISONING ORGANISM WERE ISOLATED AND IDENTIFIED. THE FREQUENCY PERCENTAGES OF ENTEROBACTERIACEAE, PSEUDOMONADES AND LACTOBACILLI WERE 227 (43.8%), 160 (30.9%) AND 131 (25.3%), RESPECTIVELY. CLOSTRIDIUM PERFRINGENS AND STAPHYLOCOCCUS AUREUS WERE DETECTED IN 34 AND 80%, RESPECTIVELY. SHIGELLA DYSENTERIAE WAS ISOLATED BUT NO SALMONELLAE WERE DETECTED.
