Summary

On-site measurement was carried out in about 30 cases consisting of 4 types of distribution chains for meat and 4 for offal. Interruptions were found more frequently in the chain and during loading and storage. Such breaks caused a shortened latent phase in contamination. Factors other than microbiological contamination, such as drip loss or discolouration, can inhibit marketing of the product.
